Ingredients:
1 lb carrot cut into 3 1/2 x 1/2 inch sticks
1 small onion cut into thin strips
1 red bell pepper cut into thin strips
1 1/2 cup apple cider vinegar
1/2 cup sugar
2 cloves garlic (crushed lightly)
2 tbsp dill seed
3/4 tsp salt
1. Blanch carrots in boiling water for 1 minute, drain, pour cold water over carrots, drain.
2. Pat carrots dry.
3. Combine onion, bell peppers, vinegar, sugar, garlic, dill seed, and salt in a an.
4. Cook for 2 minutes on medium heat.
5. Let marinate for 24 hours and serve.
