Salmon Cakes

Serves 6

Ingredients:
1/4 cup dijon mustard
1 tbsp rice vinegar
1 1/4 cups mayonnaise
2 lbs salmon
1/2 cup chopped capers
1/2 cup diced red onion
1/4 cup chopped parsley
pinch of salt and pepper
2 cups panko bread crumbs
3 tbsp olive oil
6 hamburger rolls

1. Combine mustard, vinegar, 1/4th cup mayonnaise to make sweet mustard sauce. Set aside.
2. Mix the salmon, onions, capers, parsley, sakt, pepper, and remaining mayonnaise in medium bowl.
3. Add 1/4 cup panko bread crumbs.
4. Form the mixture into 6 equal patties.
5. Lightly coat with panko bread crumbs.
6. Heat the oil in skillet over medium heat.
7. Add patties and cook until golden brown on both sides (about 7 minutes).
8. Serve on rolls with sweet mustard sauce.
